Welcome to Indian Foody Boy's Kitchen. Today I;m making methi makki paratha. Corn meal flour - 1 cup1/4 tsp carom seeds, 1 tsp salt, 1 cup chopped fresh fenugreek leaves, Washed and chopped, 1 cup warm water, Make a soft dough by adding little water at a time.
Rub with your palm to make a smooth dough, Add more water if its hard, Make it for 5-6 minutes.
Cover and Keep aside for 5 minutes, Make balls of this dough, Apply some dry flour and make balls. It made 8 ballsHeat a griddleTake a ball, coat with dry corn meal. Sprinkle some on the rolling board.
If rolling with hand, make sure your hands are clean and dried. Flatten with Put on the board, then pat with fingers while moving it in circlegriddle is heated, add few drops of oil and wipe with a clothtake the paratha on one hand, remove any extra flour then put on the griddleIts color has changed, flip itit has brown spots on the bottom, keep gas on low-medium, Add 1 tsp oil over itflip itkeep flipping till light golden brown from both sidestake it out into a platethese are very crispyit has two separate layers .
You can have it with any dry or gravy based sabzi. You can have it for the breakfast or also pack it in tiffin for kids
